Hope this recipe wasn't actually top secret, Mom! ;)
These are the most deliciously satisfying oatmeal cookie situation I have ever partaken in. The photocopied recipe my Mom gave me is on a company letterhead from Simpson House Inn in Santa Barbara. And we all know that ANYTHING coming out of Santa Barbara is superior to the rest of the world, right?
Simpson House's Best Stolen Chocolate Chip Recipe
2 cups butter
2 cups sugar
2 cups brown sugar
Blend until creamy. Then add...
4 eggs
2 tsp vanilla
Sift dry ingredients (or not... like me)...
4 cups flour
2 tsp baking powder
2 tsp salt
2 tsp baking soda
Add to egg, butter, sugar mixture and beat well.
Stir in...
2 cups chocolate chips
2 cups white chocolate chips
2 cups raisins
3 cups nuts (I love using pecans)
2 cups old fashioned rolled oats
3 cups granola (recipe suggests orange/almond mix)
Mix well and shape into golf ball size. Bake on an unbuttered cookie sheet at 340 degrees for 12-14 minutes.
Obviously this makes a GIANT batch of GIANT cookies. Use the hugest bowl or feeding trough you can get your hands on unless you love kitchen messes. Or, you could just half the recipe like I did.
Enjoy!
XO,
Beth
